GFS Stormcast LI / CAPE on soundings

G'day,
I'm new around here, but have been learning how to read charts for storm chasing in VIC / Southern NSW for about a year.
I've been using the BSCH Stormcast to work out where to go, and it's been pretty good at predicting actual conditions about three days in advance.
What I'm noticing though, is some aspects of the soundings don't seem to match the charts. For example, looking at the lifted index, an area may have a value of -7, but when I click that area to view a sounding, it is only -4. Similarly, CAPE values are often half the chart value. It's like the charts and the soundings are from two different models. I did cross check against BOM soundings, and they were different again. Should I be looking elsewhere for my data? Am I interpreting these charts incorrectly?
