Purely from a cooking perspective the folds would have to be the top - you can't fill them facing down - it all drops out

My local noodle shop makes the most amazing dimmys - his dad was the legendary dimmy maker at Sth Melb Market - and they are massive and almost hexagonal in shape, two is more than enough for a meal !

Apocalypse, while you are clearly a smart and wonderful person who knows which end of a dim sim faces up, I might have to take you to task about your allegation that the rounded bottom of the dim sim is best saved till last. Any dim sim connoisseur knows that saving the pointy folded end with the crispy bits till last is the only real way to savour a good dimmy

Well yes, clearly the smartest people (shall we call them geniuses) can identify the rounded section as the bottom.
Are we talking deep-fried here, as I probably would take the crispy folded end. But if we are talking about boiled dim sims, than the rounded end would become my first choice.
